Agave Caramelized Pineapple

This marks Recipe #2 in my crazy, insane Project 365 – A Year of Family Cooking
Today's recipe is a delicious, yet reasonably healthy dessert!
 
Ingredients:

1 good ole pineapple
1 tablespoon of coconut butter
2 tablespoons of agave
 
Directions:

Heat a tablespoon of coconut butter on a griddle on medium heat.

Cut off the top of the pineapple and trim off the skin. Quarter
pineapple lengthwise, reserving 2 quarters for another use. Cut
pineapple into 1/4-inch-thick long slices.

Place the pineapple on griddle and brown on one side for 1-3 minutes.
Turn and drizzle two tablespoons of agave over pineapple. Cook another
1-3 minutes or under agave has become caramelized.

Serve with coconut ice cream. Muah!
