Today's Project 365 – A Year of Family Cooking recipe is another tasty side dish. By the way, this is a Monaica original recipe – hope you enjoy! : )
Ingredients:
1 butternut squash, cut in half the long way
1 tablespoon of butter
1 tablespoon of cinnamon
5 tablespoons of agave or organic maple syrup
1/2 cup of shredded coconut
1/2 cup of chopped plain almonds
1 cup of water
Directions:
Heat oven to 375 degrees. Remove seeds from squash. On a rimmed baking sheet, place the squash face down and pour water on to baking sheet. Cook for 45 minutes. Remove squash and scrape the insides into a mixing bowl or oven safe baking dish. Add butter, cinnamon, agave, almonds and 3/4 of the coconut. Mix together with a spoon – the texture should be somewhat lumpy. Sprinkle the remainder of the coconut on the top and place dish in oven. Bake for another 10-15 minutes, or until the coconut on top is a golden brown.
