Kids Love Them Paleo Fish Sticks

Ready for a yummy, but healthy fish stick that kids love? Try this low-carb version with almond flour – it's quick and easy!

Ingredients:

5 Tilapia Fillets, or other mild flavored white fish
3 Organic Eggs
1 C Almond Flour
1/4 C Coconut Flour 
1 tsp Salt
1/2 tsp of Pepper
Coconut Oil 

Step 1: Start by cutting fish fillets in to long strips.
 

Step 2: Sprinkle fish sticks with extra the coconut flour. This will help the batter stick better to the fish when you cook it.

 

Step 3: In a separate bowl, whisk the eggs. Dip the fish sticks in the egg.

 

Step 4: Roll the fish sticks on in the almond flour. It's easiest for me to do in a plate, but the surface is so flat. 

 

Step 5: Using an electric skillet, heat coconut oil so that it cover the bottom. I use a lot of coconut oil. Place the breaded fish sticks in the skillet. Fry on each side about 4-5 minutes, or until golden brown. If 4-5 minutes is not long enough, let it sit on one side for a few more minutes to ensure that the breading sticks to the fish. Turn as needed.

Step 7: Remove fish sticks and place on plate. Enjoy!
