Peanut Butter Kiss Cookies

Peanut Butter Kiss Cookies

Day 4 of Project 365 – A Year of Family Cooking brings us a nice after-school treat!

Ingredients:

1/2 cup creamy peanut butter

1 teaspoon baking powder

4 tablespoons unsalted butter, softened

2 large eggs

1 cup packed light-brown sugar

1/4 teaspoon fine sea salt

1 teaspoon pure vanilla extract

1 1/2 cups all-purpose flour,

1/3 cup sugar to sprinkle on the balls

1 bag of Hershey's kisses

Directions:

Preheat oven to 350 degrees. Line two baking sheets with Parchment paper – this makes ALL the difference!

Combine peanut butter and butter in a bowl and mix with an electric mixer until smooth. Slow add brown sugar, eggs and vanilla and beat until combined.

In a small bowl, whisk together flour, baking powder, and salt. With mixer on low speed, gradually beat in flour mixture in two batches. 

Using an ice cream scooper, scoop off dough and roll into balls. Roll the balls in sugar – just enough so that each ball is coated. Space the dough balls apart on the baking sheet. 

Bake cookies for 10-12 minutes, until cooked all the way through. Remove from oven. Press one unwrapped Hershey's kiss on top of each cookie and allow to cool on a baking sheet. 

You'll be lucky if these last two days!
