Roasted Red Pepper Hummus

Day 6 of Project 365 – A Year of Family Cooking - greek style!

Ingredients:

2 cloves garlic, minced
2 cups of chickpeas, soaked overnight, rinsed and drained
1/3 cup tahini
1/3 cup lemon juice
2 roasted red peppers
1 tablespoon of sea salt

Directions:

How to roast peppers:

1. Turn on oven to Lo Broil.
2. Cut peppers in to long chunks.
3. Put foil on cookie sheet and place peppers on it.
3. Cover each side of the peeper with just a dab of oil.
4. Broil on lo for 7-20 minutes, depending on the heat of your oven and how roasted you want them to be. I like mine to be a little blackened, but not charred!

How to make hummus:

Boil chick peas on the stove top until softened (about 30 minutes). In an electric food processor or blender, combine garlic, garbanzo beans, tahini, and lemon juice. Add roasted peppers and sea salt and process until it's smooth. You may add salt and pepper to taste. Chill in fridge – it takes better cold. We enjoy ours with almond chips!
